Sweet and Spicy Grilled Salmon

This dish is really quick and one of my families favorites

You will need:

-4 Salmon Fillets 3/4"-1" thick(skin on)

-1 stick of butter

-Garlic powder


-1 box Zatarains  Caribean Style rice

-Bottle of Spicy Szechuan Sauce  (substitute Teriyaki for the kids)

First, preheat your grill to 425 degrees. While grill is heating place stick of butter in bowl and microwave until melted. Lay fish skin side down and make 3 incisions against the grain of the meat. Drizzle melted butter over fillets. Next, lightly sprinkle with garlic powder and paprika. Let rest while you follow microwave directions for rice mix. When rice is finished place fillets skin side down on grill. After 3-4 minutes carefully flip fillets and grill another 3-4 minutes before flipping skin side back down. You are now ready to brush sauce onto the fillets and let fish rest for 5 minutes before serving over bed of Caribean rice
