To spatchcock a game hen or chicken just cut the back bone out so it will open up and lay flat. Use your kitchen shears starting at the neck and cut the back bone out. This was the first time I have done this and it takes only a few seconds to do. Once the back bone is removed, open it up like a book and flatten it out and pressing it down.
Use your favorite seasonings and marinades and grill over direct heat. I placed a foil covered brick on mine to expose as much of the bird to the grill as I could.
Cut some lemons in half and grill along with the hens. This is a great way to add some great lemon flavor to anything!!
Cook until to 170 and enjoy!!
