Mark Description

Pork Shoulder Steaks (at least 1 inch thick)
Coarse Salt and Pepper
Pork Rub (I used code 3 Grunt Rub)
Barbecue Sauce of choice
Season Steaks with salt and pepper then season with rub.
Heat coals and arrange charcoals for indirect grilling. The grill should be between 325 and 375 degrees.
Before putting steaks on the grill add wood chips or wood chunk of choice. Cherry wood was perfect!
Place steaks on the indirect side of grill. Close vents to half to insure an amazing smoke ring. Don't flip the steaks and only peek if you must. Let grill and be happy for 30 minutes then add 1 and 1/2 handfuls of charcoal plus another wood chunk to the direct heat side. Close lid and open vent. Once the temp has reached to 400 sear the steaks for 3 minutes on each side.
Now choose. Do I want BBQ sauce or not? If not take them off and enjoy. If so, brush with sauce of choice and place back on indirect heat for 2-4 minutes per side.
This is hands down my favorite inexpensive cut of meat that is full of grilling possibilities.
