Pulled Pork Ragu over Zucchini

Mark Description

This Pulled Pork Ragu over Zucchini recipe is a perfect way to use that left over pork after smoking a Boston Butt. I refuse to throw away leftover meat, and this is one of my favorite leftover pork recipes!!

Add the following to a large pot:
– 2 tablespoons of olive oil
– 2 diced medium sized onions
– 1/2 diced yellow bell pepper
– 2 diced carrots
– 2 diced stalks of celery
– 1 teaspoon of salt, pepper, oregano, and basil
– 2 tablespoons of minced garlic

Saute the veggies for 8-10 minutes then add 1/2 cup of red wine and reduce for about 3 minutes. Add the left over pork and cook for another 3 minutes. Add 1 can of crushed tomatoes and 1 can of diced tomatoes.

Cover and reduce the heat to low and let it cook for a couple hours. The longer it simmers, the better it is.

The zucchini noodles are easy if you have a Vegetti. Put the noodles in a skillet with a little olive oil and saute for about 2 minutes with salt, pepper, oregano, basil, and a little garlic powder. Don't over cook the noodles…you want them to have a little crunch to them.
