These Hawaiian Pineapple Pork Chops are packed with tropical flavor and are really easy to whip up. I like to step outside my comfort zone sometimes and experiment with different ideas. This little experiment is definitely one that I will do again!
Sprinkle Da Rub on the pork chops and rub it into the meat and let it marinate for a few hours.
Lay the marinated pork chops out on a cutting board and spread the pineapple cream cheese on them. Then lay a half slice (rainbow shaped) of pineapple on top of the cream cheese. Fold the pork chop in half, wrap bacon around it and secure with a tooth pick. I used one and a half slices of bacon. You just want to ensure the cream cheese doesn't ooze out on the grill.
Set your grill up for indirect grilling. Fill 2/3's of the grill with charcoal, leaving a 1/3 without coals. Put the Hawaiian Pineapple Pork Chops on the cooler side of the grill (you'll be fighting flare ups if you grill bacon directly over hot coals). Grill at 400-450 for about 25 minutes. You may have to move the chops over the coals to ensure your bacon gets good and crisp. Before you take them off the grill, brush two layers of Da Kine Hawaiian Spicy BBQ Sauce on them. Let the sauce caramelize into the meat, remove, let them sit for 2 or 3 minutes and then serve hot!
