This is a super simple way to add a little smoke and char to one of my all-time favorite dishes, Chicken Caesar Salad.

Start off with boneless skinless chicken breasts. Marinate them in a classic Caesar dressing for at least 30 minutes. Set your grill up for direct grilling. Remove the chicken from the marinade and season with:
– Salt
– Pepper
– Garlic Powder

Grill the chicken breasts a 375-400 for about 20 minutes or until they reach an internal temperature of 165 degrees. Remove from the grill, let them sit for about 5 minutes and then slice into salad size chunks.

Slice romaine lettuce hearts in half, lengthwise. Remove any loose leaves. Lightly coat the romaine hearts with classic Caesar dressing and top with grated parmesan cheese and pan fried bacon bits. Place the hearts on the grill for 45 seconds to a minute; just long enough to melt the cheese. Remove and put the hearts on the plates you plan to serve them on.

Add sliced chicken and drizzle creamy Caesar salad dressing and top with croutons and more grated parmesan cheese. Serve immediately!
