I made these shrimp to serve with some Grilled Ahi Tuna Steaks and they had a great flavor..
1 pound medium shrimp, peeled and deveined with tail on
1 clove minced garlic or 1 teaspoon chopped garlic
½ teaspoon sea salt
1 tablespoon olive oil
½ to 1 teaspoon Cajun seasoning (I used Tony’s), depending on taste and love for Cajun flavor
1 fresh lemon or about 1 teaspoon of bottled lemon juice
In a large bowl, place rinsed off shrimp and drizzle with olive oil. Toss in the minced or chopped garlic, sea salt, lemon juice, ½ teaspoon of Cajun seasoning and mix all until shrimp are evenly coated with oil, seasoning and garlic. At this point you may or may not want to add more Cajun seasoning, cover bowl with a lid or wrap and place in refrigerator for 30 minutes to 1 hour.
Prep grill and charcoal; when coals are ready and still hot place a cooking rack on grill, dump shrimp on rack and allow to cook to 2 or 3 minutes each side, or until opaque. Transfer to a serving dish and serve immediately.
