Grill Fried Chicken is a good way to combine the best aspects of fried chicken with that smoky charred taste! You have to be super careful, but if you do it correctly, the chicken will come out perfect.
Slice boneless chicken breasts into chicken tender strips. Sprinkle Da Kine Hawaiian Da Rub (Smoky) seasoning over the chicken, rub it in, and let it sit for at least an hour.
Set your grill up for direct grilling and put a cast iron skillet half full with vegetable oil on the grate. You want to keep the internal temperature at 350 degrees throughout frying process.
In a large bowl, combine 2 cups of all purpose flour, 1 cup of panko bread crumbs, two table spoons of Da Kine Hawaiian Da Rub (Smoky), and a teaspoon of salt. In another bowl, whisk three eggs into two cups of milk.
Put the sliced chicken tenders in the flour mixture and ensure it is thoroughly covered. Then, dunk them into the milk and eggs. Put them back in the flour mixture one more time and then gently place them into the hot oil on the grill.
If you keep the internal temperature of the grill at 350 degrees, you should fry the chicken for about five minutes per side. When the chicken is golden brown and the internal temp is at least 165, remove from the oil and put them on a bed of paper towels to absorb the excess oil.
Place flour tortillas directly on the grill long enough to get a little char. Chop the Grill Fried Chicken and put it on the tortilla. Top with lettuce, salsa, Da Kine Hawaiian Hot Sauce, shredded sharp cheddar, and a little ranch dressing.
