Baby back ribs are truly one of my favorite things to eat! I have watched my husband grill ribs for years, but never tried grilling or smoking them myself. I wanted to experiment with some new rubs, so I grilled two racks of ribs at once.
I used Da Kine Hawaiian Da Rub Original for one rack and paired them with the Da Kine Hawaiian Original BBQ Sauce.
For the other rack I used Da Kine Hawaiian Da Rub Spicy and paired them with Da Kine Hawaiian Spicy BBQ Sauce.
The night before grilling, I seasoned each rack liberally and covered with foil. 3 Hours before grilling I sat the ribs out and seasoned them again.
Prepare charcoals in a chimney. I inserted a Smokenator 1000 into my Weber Platinum. If you don't have a Smokenator, treat yourself to an early Christmas/Birthday/Sunny Day present. Once charcoals are glowing pour into the Smokenator, layering your choice of smoke. I used Pecan wood chips and had great results with a nice smoke ring. Insert the liquid dish in the Smokenator and fill with liquid of choice. I went with water, but have used beer in the past. Cover the grill for at least 5 minutes with vents open to gauge your temp. You want to keep the heat between 225 and 250 the entire time.
I used the 3-2-1 method to smoke the ribs over indirect heat. 3 hours with smoke, 2 hours wrapped in foil, and 1 hour with no smoke. The last 30 minutes brush BBQ sauce on ribs every 15 minutes. I used two coats.
Remove ribs from grill and let sit for 10 minutes. Slice and enjoy.
