-1 pkg (12oz) crawfish tail meat chopped(save 20 whole pieces)
-1/2 onion diced
-1 large jalepeno diced
-1/4 stick of butter
Cobine all ingredients in medium saucepan and sauté for about 5-6 min. Remove from heat and let stand and thicken. In the meantime, boil 10 eggs on stovetop for for 10 min. After boiling rinse with cold water and cut in half removing and saving yokes. In a bowl, mix yokes, 3 tbsp of mayo, 2 tbsp mustard, 1/4 tbsp cayenne, 1tbsp lemon juice, 2 tsp fresh chives chopped and the crawfish mixture. Once thoroughly mixed spoon mixture into each egg half topping with a whole crawfish tail and sprinkle with salt and pepper to taste and paprika(mainly for appeRance). Refrigerate and serve cool.
