Trim fat off of some chicken thighs, Flatten with a meat mallet. Spread out and season both sides with your favorite seasonings. I smeared some apple butter on mine. but use whatever you like. Top with onions and mushrooms that I diced and cooked up.
Lay 4 slices of thin cut bacon down is a small bowl. Lay your chicken down in bowl and pull bacon over and wrap around the thigh. Pulling kinda tight to form a ball. Season well and cook indirectly at 250 for a few hours with some good smoke. When internal temp reaches 165 remove and let rest for a few minutes.
The thin bacon will shrink to make a tight ball. Enjoy!!
