I used two of their sauces on baby back ribs – Muscadine Barbeque Sauce and Carolina Mustard Barbeque Sauce that were given to me by the Carolina Country Store in Wilmington, North Carolina. I lightly seasoned the ribs with salt, pepper, onion powder, and paprika so I didn't over power the sauces. I smoked them on my Weber Performer for about 8 hours and used the Smokinator 1000 to separate the heat from the meat. The Muscadine Barbeque Sauce is a thick, rich blend of muscadine wine, tomato paste and paprika with a hint of liquid smoke. Duplin Winery recommends using it on poultry and wild game. The Carolina Mustard Barbeque Sauce is a peppered mustard based sauce infused with the tang of pineapple juice and apple cider and rounded out with molasses, brown sugar, Worcestershire Sauce, and garlic. This is an excellent choice of sauce for ribs and chicken wings.
